Tomato Potato Soup

Tomato Potato Soup


Ingredients
Tomato soup mix or concentrate
Two large potatoes
1 can corn
pepper and other spices

Start by peeling the potatoes and cutting them into cubes.  Prepare the tomato soup by following the directions.  Add the potato cubes right away and cook the soup, simmering gently, until the potatoes are soft.  Serve with pepper.
 

Yummy Mac and Cheese

Yummy Mac and Cheese

Ingredients
5 cups cooked elbow macaroni (8 ounces raw)
4 tablespoons butter
4 tablespoons flour
2 cups milk
3/4 cup shredded sharp Cheddar cheese
pepper to taste

In a saucepan, melt butter over medium-low heat. Stir flour into the butter until the mixture is smooth. Gradually add milk, stirring continuously until the mixture thickens.  Add the cheese and keep on the heat, stirring until the cheese is completely melted. In an 8x10-inch baking dish, alternate layers of macaroni and cheese sauce. Bake in a preheated 350° oven for 20 minutes, or until hot and bubbly.

Serves 6.
 

Individual Mini Pizzas

Individual Mini Pizzas


Ingredients
English muffins
1 jar pizza sauce
shredded mozzarella cheese
garlic salt
toppings (black olives, pepperoni, sausage, pineapple, peppers, sun-dried tomatoes)

Spread your muffin with a spoonful or two of pizza sauce and sprinkle on the cheese.  Using a spatula, place it on a grill or in a pan over a hot fire.  When the cheese starts to melt, add your toppings and sprinkle on some garlic salt.  The pizza is ready when the cheese is completely melted.
 

Pizza Mountain Pie

Pizza Mountain Pie


Ingredients
two pieces of bread
pizza sauce
mozzarella cheese
pizza toppings
Over-the-fire sandwich iron

Butter each piece of bread on one side. Place one piece of bread in one half of the sandwich iron with the buttered side out. Place the sauce, cheese, and other goodies in the middle of the bread and place the second piece of bread over the top, buttered side out. Now clamp the cooker together and lock it. Place the sandwich iron in the hot coals and rotate when you think one side is done.

If you'd rather have a different treat, you can change the filling in your hot sandwich.  Try using ham and cheese to make a hot Ham and Cheese Mountain Pie. Jam or jelly makes an amazing fruit pie.  You can also put peanut butter, marshmallow (cut up in pieces or whole), and a section of a Hershey Bar for a tasty dessert.
 

Orange Half Muffins

Orange Half Muffins


Ingredients
oranges
instant muffin mix (your favorite flavor)
tin foil

Cut an orange in half and scoop out the insides. Using a spoon, put prepared muffin mix in one half of the orange. Put the other half back on the orange and wrap foil around the whole thing. Put in hot coals to bake the muffin inside of the orange shell. Enjoy your orange-flavored muffin!
